Mother’s Day <3

Hello everyone! We celebrated Mother’s Day a few weeks back. It was a busy weekend, so my post is running a bit late, but lets not focus on that! πŸ˜€ Lets focus on the cake I made for my Grandma.

My Grandma called me a few weeks prior to Mother’s Day, and asked me whether I had the time to make her a Mother’s Day cake? Of course I wanted to make a cake for her! πŸ™‚ I started to plan the cake, and think what would be something she likes… Then it occured to me – during summertime, granny loves to eat blueberries with rye bread and milk. This gave me an idea to combine blueberry pie and cheesecake. It would have the cosy homemade blueberry pie feeling, but in a bit more festive form. And here is the outcome:
The cake had a blueberry pie crust topped with loads and loads of blueberries. πŸ˜› On top I made a smooth vanilla flavored cheesecake layer. The outcome was really nice, this was a blueberry pie with vanilla sauce transformed into a cheesecake! πŸ™‚

And here is a statement, which is so true. Period.

Hi! It’s been a while since my last post. Last weeks have been super busy and I’ll post about them later. πŸ™‚
This post is about our Easter. We had a lovely family dinner already on Thursday. Me and my mom divided the menu, I was in charge of the starters, salad, and dessert + hosting, and she took care of the main course. Then we ate another dinner with my in-laws on Sunday.
I love hosting parties and dinners, so this was a very pleasant job for me! Now I could go overboard with my Easter and spring decorations… πŸ˜€ Here are some photos before we go to the actual Easter desserts. πŸ˜‰

20170416_171125376_iOS.jpgThese two cakes were a huge success! Super delicious and smooth taste. Especially this Carrot cake Cheesecake was a real super positive surprise in how good it was! I was expecting it to be good but it exceeded my expectations. πŸ˜› Have to do this one again!

1st Anniversary Cake (with tutorial photos)

Happy Wednesday to you all! I promised to make a tutorial post of the next custome cake I make. Well here it is. πŸ™‚

I was asked to make a cake shaped the number 1, and customize it with the company Triuvare’s colours.

First I started up making the gluten-free cake batter. I decided to bake the cake on a sheet so it would be easier to cut the cake into suitable peaces for building the shape of 1.

Two of these were enough to build this cake. And here is the first layer moistured with orange juice:

As I mentioned earlier, the cake batter was gluten-free. As for the fillings, I made a smooth mango mousse and a more fresh and breezy citrus mousse. Yum!

This cake came up really nicely, and I was really happy with the outcome! πŸ™‚

Having fun with Birthday cakes

This month I have had the pleasure to use my imagination and creativity to design personalized birthday cakes for two (grown-up?) men – my big brothers.

Here are my creations:



Two very different cakes, one quite playful and the other a bit more serious. Β πŸ˜‰

These cakes not only looked different, but had also different fillings inside. The first one had a strawberry mousse on one layer and caramel + fresh strawberries in the second layer.Β In the other cake I made a raspberry mousse and a white chocolate-lime mousse.Β The cake batter was gluten free in both cakes.

Luckily I have a few more these sort of cakes coming up in a few weeks. I’m going to tell you all about them later! πŸ™‚

Most delicious Chocolate Cake in the world!

Last weekend I had the chance to make cakes for my friend’s baby’s Christening. She asked for a really chocolate rich Chocolate cake, and that is what I did!

I found a really promising recipe and tuned it a bit for even smoother outcome. Let me tell you, it was UNBELIEVABLE (had to make one cake just for me! πŸ˜€ )


One interesting thing about this cake, was that there isn’t actually any chocolate used in making the cake, just coca powder. Before this recipe I really have thought that you can’t get a chocolate-rich and moist taste from cocoa powder, you must use chocolate. I was proved wrong – I found a revelation from the combo coco powder + hot water. Have to try this combo in some other recipes too!


I made a chocolate ganache for the filling as well as for the topping. A good match, chocolate with chocolate… πŸ˜‰


Yummy! I might have to get another piece from the fridge now. πŸ˜›

Another year has gone by…

Okay, welcome year 2017! I have big hopes on you… πŸ˜‰

Christmas time was quite short this year, but anyhow really lovely and warm ❀
I feel like I’ve gained a few pounds during these past two weeks, with all the Christmas food, chocolates, cakes…you name it! πŸ˜€

For Christmas, I made more of those Christmas Rockyroads (if you remember from my last post), some Christmas tree-shaped meringues, different truffles, peppermint-chocolate cookies, gingerbread cookies, apple-cinnamon mousse cake, and also some cake for my friends.. πŸ˜‰

Oh, they were all so goooooood….. I think I have still a few cookies left, maybe I could enjoy them this coming Friday to celebrate this Christmas time. πŸ™‚

This New Year’s Eve was pretty calm and collected this year. My hubby and I were just home, we had a lovely dinner, and of course some Chocolate cake! πŸ˜‰ At midnight we went outside for a walk to check out the fireworks in our neighborhood. It was actually a very relaxing way to spend New Year’s!
And to start off this year in a healthy way, I made us healthy smoothies to start with yesterday morning: Blueberry-cardamom smoothies with a hint of maca-root powder we got for Christmas. Delicious and healthy!

Christmas party!

December! Here in Finland the length of days vanishes during winter time. By this I mean that the hours there is sun light gets shorter and shorter. Now, the sun rises at 9.30 am and sets at 3 pm – there isn’t much sun light during the day! Β πŸ˜€
Personally, I survive this dark period of time with candles, woolen socks, and CHRISTMAS!

On the 1st of December, I give myself permission to start decorating our house for Christmas, and I can start listening to Christmas carols! Okay, sometimes this all starts already at the end of November, but who counts..? Β πŸ˜‰

Traditionally, me and some of my girlfriends throw a pre-Christmas party at some point in December, where we eat, drink, talk, go to sauna, and build a gingerbread house. Well last weekend we had our party again. Eventually our evening started to turn late, so the gingerbread house operation was postponed to another evening. But here are some treats I made for this year’s party:

Rocky Roads with a Christmas twist:
I have wanted to try different variations for Rocky Roads with a Christmas twist: gingerbread, almonds, cranberries… Here is the outcome:
This recipe was super good and easy! I tried two versions, and the ones on the top were gluten-free. As the bottom, I used gingerbread, in the filling I had almonds, dried cranberries, cooked gingerbread and gingerbread dough. Can I just say, YUMMY! I’m definitely doing these for Christmas again! πŸ˜›

The other treat of the evening was this cake:
My first naked cake, and it was a success! I used a gingerbread cake, orange buttercream, and some salted caramel inside (and on top when served on a plate Β πŸ˜‰ ).
Our party was a success, everyone loved these sweets, they tasted like Christmas. Β πŸ™‚
