So the 1st of May is approaching and the Vappu celebrations are coming! I decided to take an early start by preparing the traditional Vappu-drink “sima” and trying out a new recipe for gluten-free, egg free and milk free buns.

Making sima is a tradition in my family. Our recipe is the best! πŸ˜‰ Β This year I made a bigger batch, 20 litres all together.

And because it’s Vappu, there also needs to be some buns! I tried a new recipe that suits most being gluten-free, milk free, and egg free. The banana and raspberries gave a nice touch to the mixture. These buns came up nice and crispy on the outside and yummy and soft in the inside!

Ingredients used to make sima:
– water
– sugar
– brown sugar
– lemons

Ingredients for small buns:
– banana
– raspberries
– coconut milk
– gluten-free flour
– sugar
– sunflower oil

Quiche Lorraine

Last week, I got a request for something salty to eat for 10 people. That got me thinking what would be something that is easy to eat, tasty, and fulfilling the craving for something salty.

I got quite a bit of ideas, but on top of my list came these little Quiche Lorraines!

Basically these are little pies with bacon and cheese. Simple and tasty, with these ingredients you can’t get it wrong… πŸ˜‰

I often use a muffin pan to bake small delights (in addition to muffins and cupcakes). It also worked in this recipe.

Raspberry-cheesecake brownies (gluten-free)

I got a request for some gluten-free treats. My first choice was to make gluten-free Rocky Roads, but secondly I decided to give a try on cheesecake-brownies with white chocolate and raspberries.

I tried this brownie recipe before without the raspberries, but I thought some berries would give it a nice fresh touch with all the chocolate.

Can’t wait to get some fresh berries again straight from the bushes!

This recipe contained a brownie batter with milk chocolate, a cheesecake layer in between with some raspberries, and another layer of the brownie batter. Simple and delicious!
